CHICKEN CURRY
Chicken curry is a popular dish in South Asian and Southeast Asian cuisine made with tender chicken pieces cooked in a rich and flavorful curry sauce.
To prepare chicken curry, chicken pieces are first marinated in a mixture of yoghurt and spices such as cumin, coriander, turmeric, ginger, and garlic. The marinated chicken is then seared in a pan with oil until browned on all sides and then set aside.
Next, onions and other aromatics such as ginger and garlic are sautéed in the same pan until softened and fragrant. Curry powder or a blend of spices such as cumin, coriander, turmeric, and garam masala is added to the pan and cooked until fragrant.
Tomatoes or tomato paste are added to the pan and cooked until they break down into a thick sauce. The chicken is then added back to the pan along with coconut milk or cream and simmered until the chicken is cooked through and the sauce has thickened to the desired consistency.
Chicken curry is typically served with rice, naan bread, or roti and garnished with cilantro or fresh herbs. The dish can be made to varying levels of spiciness depending on personal preference and can be customized with additional vegetables such as potatoes, peas, or carrots.
