MOUTABAL
Moutabal, also known as baba ghanoush, is a popular Middle Eastern dip or spread made from roasted or grilled eggplants, tahini, lemon juice, garlic, and olive oil.
To make moutabal, the eggplants are first roasted or grilled until the skin is charred and the flesh is soft and tender. The eggplant is then peeled and mashed or pureed, and mixed with tahini, lemon juice, garlic, and olive oil.
The tahini adds a nutty flavour and creamy texture, while the lemon juice adds a tangy and refreshing taste. The garlic adds a pungent and aromatic flavour, and the olive oil helps to create a smooth and velvety consistency.
Moutabal is typically served as a dip or spread for pita bread or crackers and is often garnished with chopped herbs or spices such as parsley, paprika, or sumac. It is a popular appetizer in Middle Eastern cuisine and can also be used as a condiment or topping for sandwiches, salads, or grilled meats.
