BABA GHANNOUJ
Baba ghanoush (also spelt baba ghannouj or baba ganoush) is a popular Middle Eastern dip or spread made from roasted or grilled eggplants, tahini, olive oil, lemon juice, garlic, and sometimes parsley or other herbs.
To prepare baba ghanoush, the eggplants are first roasted or grilled until the skin is charred and the flesh is soft and tender. The eggplant is then peeled and mashed or pureed, and mixed with tahini, olive oil, lemon juice, garlic, and herbs.
The tahini adds a nutty flavour and creamy texture, while the olive oil helps to create a smooth and velvety consistency. The lemon juice adds a tangy and refreshing taste, while the garlic adds a pungent and aromatic flavour. The parsley or other herbs add a fresh and vibrant flavour and colour to the dip.
Baba ghanoush is typically served as a dip or spread for pita bread or crackers and is often garnished with chopped herbs, pomegranate seeds, or sumac. It is a popular appetizer in Middle Eastern cuisine and can also be used as a condiment or topping for sandwiches, salads, or grilled meats.
